INGREDIENTS Measurements


3 tablespoons olive oil
1 large onion, diced
2 garlic cloves, finely chopped
1/2 kilo sausages
1 cup potatoes, peeled and cubed
1/2 cup carrots, pepped and cubed
1/2 cup zucchini, cubed
1 tablespoon flour
Salt and pepper
1 cup diced tomato with juice
1 cup water
1/2 cup sweet peas, cooked
1/2 cup kidney beans, cooked or canned and drained
1 tablespoon parsley, chopped



  • - Heat oil in a pan over a medium high heat, add onion, garlic and stir till translucent.
  • - Add sausages and stir till color changes.
  • - Mix in potatoes, carrots, zucchini and flour, season with salt and pepper.
  • - Add tomato with juice and water, let boil.
  • - Reduce heat and simmer for about 15 minutes until vegetables are tender.
  • - Add peas, beans and parsley and stir, cook for about 5 minutes.
  • - Serve sausage vegetable stew hot with rice or bread.
