8 Tortillas

  For filling

2 cans Rio Mare Tuna in olive oil
2 tablespoons olive oil
1 medium onion, diced
1 cup colored bell pepper, diced
1/2 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon cilantro, chopped
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
2 tablespoons vegetable oil
1/2 teaspoon chili flakes
salt and pepper

METHOD

  

  • - Preheat oven to 180 degrees.
  • - Heat oil in a sautéing pan over medium high heat; add onions and stir till translucent.
  • - Add pepper; continue stirring for couple of minutes, season with salt, pepper and spices add cilantro and stir to combine.
  • - Drain tuna and stir in with mixture in a bowl.
  • - Sprinkle cheese over tortilla, top with tuna mixture and another cheese layer, cover with tortilla.
  • - Repeat previous step with rest of tortillas and remaining tuna mixture.
  • - Heat oil in a sautéing pan over medium high heat; place quesadilla for about 3 minutes for each side till crisp and cheese is melted.
  • - Place in the oven for about 5 minutes.
  • - Cut into wedges and serve warm.
  • - Served with salad (Tomato, cucumber, onion, parsley, lemon juice, salt and pepper)
