METHOD
Dissolve half the yeast in ¼ cup of warm water, in a mixing bowl.
Add a little rice flour, and stir well.
Leave for 8 hours, or you can make it a day before.
Mix all flour in a mixing bowl, add yeast mixture, the rest of yeast, baking powder, olive oil, and add water gradually, use electrical mix, combine well to form dough.
Place the dough in a greased bowl, cover and leave in a warm place for about one hour or until doubled in size.
Grease a baking sheet with oil.
Shape the dough as desire into oval or round and place on prepared sheets.
Cover and let rise in a draft free place for 40 minutes.
Preheat oven to 170° degree.
Place the baking tray in the oven for 30-40 minutes, or until slightly golden.
Let cool before slicing.
Fill bread slices with grilled vegetables or meat top with you favorite cheese; place into preheated Panini grill and press or in a heavy skillet and weigh down on top of the sandwich.
