Meatballs rice soup

INGREDIENTS Measurements


300 grams minced beef
1 large onion, chopped
2 tablespoons parsley, chopped
2 tablespoons coriander, chopped
1/2 teaspoon ground cinnamon
salt and pepper
2 tablespoons oil
4-5 cups chicken stock
1 cup short grain rice washed and drained
Fresh parsley and mint leaves for garnish



  •  Preheat oven to 180 degrees Celsius.
  •  Mix beef with half amount of onion, parsley and coriander in a bowl.
  •  Season mixture with cinnamon, salt and pepper and mix well.
  •  Shape mixture into small sized balls.
  •  Arrange meatballs in oven tray and bake for about 10 minutes (cook halfway).
  •  Heat oil in a pan over a medium heat, add remaining onion and stir till translucent.
  •  Add meatballs, chicken stock and rice, bring to a boil.
  •  Reduce heat and simmer till rice is cooked.
  •  Garnish with parsley and mint leaves, serve hot.
