Sugar Syrup
METHOD
In a large bowl, combine nuts, sugar and rose water. Stir to mix. Stir in 1 tablespoon of the sugar syrup to hold nuts together.
Lay out pancakes, uncooked side up, on a work surface. Place 1 tablespoon nut filling in the centre of each pancake. Fold pancakes over filling and pinch edges to seal.
Heat oil to 160˚C (325˚F) in a deep fat fryer. Fry stuffed pancakes, turning to brown evenly, for 4 minutes or until golden.
While still hot, dip stuffed pancakes into syrup. Let excess syrup drip off. Arrange on a serving plate.
CHEF NOTES
Ataif: A type of pancake cooked only on one side. They contain yeast and are thicker than regular pancakes.
