INGREDIENTS Measurements

  For truffles

2 cups chocolate bars
1 cup whipping cream
1 cup date paste
2 tablespoons powdered milk
1 teaspoon ground cardamom
2 tablespoons cocoa powder

  For filling

Hazelnut, roasted
Almonds, roasted

METHOD

  

  • Cut chocolate into small pieces or grate.
  • Heat cream in a pot over a medium heat until about boiling.
  • Stir in chocolates till it melts, set aside and let cool.
  • Mix cardamom with dates till well combined.
  • Shape chocolate ganache into small sized balls, fill with dates and nuts.
  • Refrigerate for 30 minutes or until it holds its shape.
  • Dredge balls in cocoa powder or coconut flakes, refrigerate for 30 minutes.
  • Melt white and dark chocolate in a separate double boiler.
  • Dip chocolate balls into melted chocolate, remove and put on rack on a parchment paper to get rid of excess chocolate.
  • Make thin chocolate lines on truffles using a pastry bag.
