Fruit Chocolate Cake

INGREDIENTS Measurements

  For cake

1 cup soft butter
1 cup sugar
4 large eggs
1 1/2 cup flour
1/4 cup cocoa powder
pinch of salt
1/2 teaspoon vanilla

  For whipping cream:

2 cups heavy cream
1/2 cup powdered sugar
1/2 teaspoon vanilla

  For garnish:

Powdered Sugar
Fresh fruits

METHOD

  

  • • Preheat oven to 170˚C .
  • • Cream butter with sugar in bowl with an electric mixer on medium speed.
  • • Gradually add eggs (one after another) to the butter mixture, continue beating.
  • • Mix flour with cocoa powder, vanilla and salt, gradually add this mixture to the previous one.
  • • Continue whisking until well combined.
  • • Pour batter in 30 cm cake pans lined with parchment paper.
  • • Bake for 35 minutes, or until done.
  • • Cool cake on a wire rack when done.
  • • Meanwhile, prepare whipping cream.
  • • Pour heavy cream into a cold bowl, add sugar and vanilla ,whisk on until stiff peaks form.
  • • Split the cake into 2 layers.
  • • Spread whipped cream over 1 layer of the cake, top with fresh fruits and cover with another layer of cake.
  • • Decorate the cake with remaining fresh fruits.
  • • Sprinkle with powdered sugar.
