INGREDIENTS Measurements



  • Wash fava beans and chickpeas and soak for 8 hours (change water from time to time), repeat with chickpeas.
  • Rinse well and drain.
  • Combine all vegetables with fava beans and chickpeas
  • Mash all the ingredients in a food processor until smooth.
  • Add spices and mix well.
  • Shape falafel dough into small 3cm pâté. Fry in hot oil for 3 minutes or until golden or balls.
  • Place Falafel in flair picks with the pickles then serve on Pita bread with tomato, and Tahini sauce.
  • Garnish the serving plate with fresh thyme or sumac.


  • For serving: small pita bread- tomato- lettuce- pickles- Tahini sauce- Thyme or sumac
