Wheat Soup with Chicken

INGREDIENTS Measurements

  

2 tablespoons oil
2 onions, slices
2 garlic cloves, minced
5 glasses of water
2 whole cinnamon sticks
4 cardamoms
5 whole black peppercorns
1/2 cup wheat
5 cups chicken or meat broth
1 teaspoon salt
2 tablespoons chopped parsley
1 tablespoon lemon juice
chicken or meat pieces (optional)

METHOD

  

  • Heat oil in a pan over a medium high heat.
  • Sauté onion and garlic till translucent.
  • Add water, cinnamon, cardamom, and peppercorns and leave the whole mixture on medium heat for 20 minutes until the onions are cooked.
  • Meanwhile, in a separate pot bring the broth to boil.
  • Grind the wheat after washing it and drying it carefully, then add it to the broth.
  • Bring to boil, reduce heat while continuously stirring until it is cooked. You can add some water if needed.
  • Mix in the onions mixture to the wheat, season with salt and pepper to taste.
  • Add the lemon juice when you are sure that the wheat is totally cooked.
  • Remove the cinnamon, cardamoms and the black pepper before serving the soup.
  • Heat the chicken pieces and serve with the soup.
  • Garnish with chopped parsley (as desired)

CHEF NOTES

  • You can use meat chops with bones as well as whole wheat without grinding it, yet it will take more time. The flame has to be low while continuously stirring the soup in order to avoid sticking. If meat and bones are used, water is used instead of broth.
