Onion soup

INGREDIENTS Measurements

  For soup

2 tablespoons butter
6 white onions, julienned
2 tablespoons flour
7 cups chicken or beef stock
salt and crushed black pepper

  For serving

French Baguette
Mozzarella cheese, shredded
Parmesan cheese, grated



  • Melt butter in a pan over medium high heat
  • Sauté onion for about 10 minutes or until golden brown
  • Add flour and mix for about 3 minutes
  • Pour stock gradually while mixing, bring to a boil
  • Reduce heat and simmer for 15 minutes or until onions are cooked
  • Season with salt and pepper to taste
  • Mix mozzarella cheese with parmesan
  • Slice baguette and top with mixed cheese
  • Ladle soup in a serving plate, top with cheesy bread
  • Place in oven for 2-3 minutes or until cheese melts
