Tuna Orzo Salad

INGREDIENTS Measurements

  

2 cups orzo pasta
3 tablespoons parsley, chopped
3 tablespoons black olives, seedless, cut lengthwise
1 1/2 kidney beans, canned, rinsed, drained
1 can tuna, large pieces, drained
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon vinegar
Salt and pepper

METHOD

  

  • Boil orzo in a large amount of salted water, stir from time to time.
  • Drain and place in a bowl, drizzle with some olive oil, let cool.
  • Add remaining ingredients, season with salt and pepper.
  • Refrigerate till serving.
