Seafood bouillabaisse

INGREDIENTS Measurements

  

2 tablespoons olive oil
1 cup onion, finely chopped
3 garlic, cloves
1/2 cup celery, chopped
2 cups potatoes, small cubes
1/2 cup carrots, small cubes
1 cup leek, chopped
2 cups tomato, peeled and cubed
2 tablespoons parsley or dill, chopped
1/2 teaspoon ginger, finely chopped
2 bay leaves
1/4 teaspoon thyme
6 cups fish or chicken stock
salt and pepper
1/2 teaspoon saffron, dissolved in a tablespoon of warm water
1/2 kilo fish fillet, large pieces
1 crab, cleaned
1/2 kilo shrimps, cleaned
1/2 kilo shells, cleaned

METHOD

  

  • - Heat oil in a pan over a medium high heat.
  • - Sauté onion, garlic and celery till translucent.
  • - Add all ingredients except seafood, bring into a boil.
  • - Reduce heat and simmer for about 15 minutes.
  • - Add fish and cook for 3 minutes then remove it and set aside.
  • - Add the rest of the seafood and cook for 10 minutes.
  • - Return fish, season with salt and pepper to taste before serving.
