Roasted chicken with pickled lemon

INGREDIENTS Measurements


1 chicken, cut into pieces
2 medium onions, diced
4 garlic cloves, minced
1/2 cup chopped cilantro
1/2 cup chopped parsley
1/2 teaspoon grated fresh ginger
1/2 teaspoon turmeric
2 tablespoons olive oil
1 cup water or chicken stock
2 pickled lemons
1/2 cup olives



  • Rinse Chicken rub with salt. Rinse well again and pat dry.
  • Mix together, onion, garlic, spices, parsley, cilantro in a bowl, season with salt and pepper to taste.
  • Rub the chicken pieces with ½ of the mixture.
  • Heat oil in a pan over medium high heat, add chicken and stir till browned from all sides.
  • Add water and cover, cook for 15 minutes.
  • Chop one pickled lemon and combine with the remaining onion and spice mixture and add to chicken.
  • Rinse and drain the olives and add to the chicken. Continue cooking additional 15 minutes.
  • Cut the remaining pickled lemon into strips.
  • Place chicken on a serving dish, garnish with the sauce, olives and pickled lemon strips.
