Potato stuffed with tuna

INGREDIENTS Measurements

  For filling

2 cans Rio Mare Tuna in olive oil
4 large potatoes, boiled and peeled
1 large onion, finely chopped
1 tablespoon parsley, chopped
1 teaspoon all spice
2 tablespoons mixed cheese, grated
Salt and pepper

  For coating

1/2 cup flour
2 eggs, beaten
1/2 cup breadcrumbs
Oil for frying



  • - Drain tuna and mix in a bowl with onion, parsley and cheese, season with spices, salt and pepper.
  • - Cut each potato into 3 equal parts (2 cm thick) then cut each slice in the middle (making sure not to cut till the end).
  • - Stuff potato with tuna mixture, lightly press fillings.
  • - Coat potatoes with flour, eggs and breadcrumbs.
  • - Fry stuffed potatoes in hot oil till golden brown from all sides.
  • - Serve with your favorite salad and tomato sauce.
