Potato stuffed with herbed beef (Batata Mbatana)

INGREDIENTS Measurements

  

6 large potatoes
1/2 kg grounded meat
1 large onion, finely chopped
2 eggs
1 cup breadcrumbs
1 cup chopped parsley
2 tbsp grated Parmesan cheese
1 teaspoon mix spices
1/4 cup flour
2 eggs, beaten
1/2 cup bread crumbs
Salt / pepper
Oil for Frying

METHOD

  

  • Heat oven to 180 ° C.
  • Wash potato, cover with cold salted water in a pan, and boil over medium heat until almost done.
  • Cool then peel and divide into two halves (hollowing a bit).
  • Mix meat, onion, egg, grated cheese, breadcrumbs, parsley in a bowl.
  • Season withsalt, pepper and spices.
  • Fill potatoes with mixture, apply light pressure to secure filling.
  • Cover stuffed potatoes with flour, then egg, then breadcrumbs.
  • Fry stuffed potatoes stuffed in a little oil until golden and then placed inoven tray.
  • Bake for 15-20 minutes or until potatoes are done.
  • Serve stuffed potatoes hot or cold with salad or your favorite sauce.
