Oven Baked Chicken with Potatoes

INGREDIENTS Measurements


1 whole fresh chicken cut into 8
2 medium onions, sliced
4 tablespoons oil
2 tablespoons tomato paste
4 cups tomato juice
3 potatoes, medium slices
1 cup stock
2 tablespoons olive oil
Salt and pepper



  • Season the chicken with salt and pepper.
  • Heat the oil in a large pot over medium high heat, place chicken pieces and onion.
  • Stir until the chicken is golden on both sides.
  • Preheat the oven to 180 degrees.
  • Mix the tomato paste with tomato juice in a bowl.
  • Combine the potato slices, onion and tomato with the chicken in an oven dish or casserole.
  • Add remaining liquids and the stock. Season with salt and pepper.
  • Place the casserole in the oven for about 35 minutes or until chicken is fully cooked.
  • Drizzle with olive oil.
