Marinated Grilled Chicken

INGREDIENTS Measurements


1 whole chicken (about 1 kilo)
1/2 teaspoon ground cumin
1 teaspoon ground coriander
salt and pepper
1 teaspoon ground cardamom
1/4 cup olive oil
2 tablespoons lemon juice
Sliced grilled vegetable (onion/ colored pepper/ colored zucchini)



  • Wash the chicken and soaked in salted water for about 15 minutes, then pat dry.
  • Cut the chicken in half down the back using sharp scissors or knife.
  • Mix remaining ingredients in a bowl, stirring until well combined.
  • Season the chicken with the mixture by rubbing into the chicken, cover and set in the refrigerator for at least two hours or overnight.
  • Heat the surface of the grill and once it reaches a high temperature place the chicken and cook for about 10 minutes for each side.
  • Serve hot with rice, bread, grilled veggies.
