tablespoons butter

white onions, julienned
2
tablespoons flour
7
cups chicken or beef stock
salt and crushed black pepper
For serving
French Baguette
Mozzarella cheese, shredded
Parmesan cheese, grated
METHOD
Melt butter in a pan over medium high heat
Sauté onion for about 10 minutes or until golden brown
Add flour and mix for about 3 minutes
Pour stock gradually while mixing, bring to a boil
Reduce heat and simmer for 15 minutes or until onions are cooked
Season with salt and pepper to taste
Mix mozzarella cheese with parmesan
Slice baguette and top with mixed cheese
Ladle soup in a serving plate, top with cheesy bread
Place in oven for 2-3 minutes or until cheese melts
