Okra casserole with lamb shank

INGREDIENTS Measurements


1 teaspoon ground cumin
1 teaspoon ground coriander
2 small lamb shanks
1 large onions, chopped
2 garlic cloves, chopped
4 large tomato, diced
1/4 cup tomato paste
2 cups chicken stock or water
1/2 Kilo okra
salt and pepper



  • Mix cumin and coriander in a small bowl with salt and freshly ground pepper.
  • Rub the meat with half the spice mixture
  • Heat oil in a pan over medium high heat, add meat and brown on all sides.
  • Add onion, garlic and remaining spice mixture over the meat, Sauté for 5 minutes.
  • Pour diced tomato, paste and stock over the meat and simmer.
  • Cook for 20 minutes.
  • Add okra and stir, cook for another 20 minutes.
  • Serve warm with rice.
