In small bowl, dissolve yeast and sugar in ¼ cup water and leave for 5 minutes, or until foamy.
In another bowl, mix flour, salt, and saffron.
In large bowl of an electric mixer, lightly beat egg on low speed. Beat in yeast and flour mixtures. Gradually beat in remaining water. Continue beating until smooth.
Cover with a kitchen towel and let rise in a warm place for 45 minutes, or until foamy.
Heat oil to 160˚C (325˚F) in a deep fat fryer. Ready any of your favorite fruit choices.
Using a wooden skewer, dip fruits or date balls into batter, let excess drip off, then slip into the hot oil. Fry, turning to brown evenly, for 4 minutes or until golden.
While still hot, dip hot fritters into Sugar Syrup, letting excess drip off. Arrange on a serving plate.
