Cranberry-raisins wild rice

INGREDIENTS Measurements

  

1 cup wild rice (or long-grain brown rice)
1 cup basmati rice
3 tablespoons oil
1/2 cup raisins
1/2 cup dry cranberry
2 spring onions, sliced

METHOD

  

  • Boil large amount of water in a pot over a medium high heat, season with salt.
  • Add wild rice and boil for about 25 minutes, add basmati rice and boil for about 8 minutes or until cooked.
  • Drain rice, heat 2 spoons of oil in a pot over a medium heat.
  • Add rice with half amount of raisins and cranberry, season with salt and stir.
  • Cover and simmer till heated.
  • Heat reaming oil in a pan over a medium heat.
  • Stir in onions for 2 minutes, mix in remaining cranberry and raisins for about 2 minutes or until soften.
  • Serve hot and garnish with prepared onion mixture.
