Tuna toast and cups

INGREDIENTS Measurements

  

2 cans Tuna in olive oil
8 toast slices
1/2 cup spring onions, chopped
1/4 cup butter
Salt and pepper
1 cup cheddar cheese, grated
2 tablespoons olive oil
1 tablespoon lemon juice
1 cup mozzarella cheese, grated
tomato slices

METHOD

  

  • - Drain tuna and place in a large bowl, add onions, oil and lemon juice, season with salt and pepper, mix till well combined.

  For Tuna melt

  • - Preheat oven to 180 degrees Celsius.
  • - Brush toast bread with butter.
  • - Toast or pan-fry from both sides until golden, place in a sheet pan, top with tuna mixture.
  • - Cover with sliced tomato, top with mozzarella cheese.
  • - Place in the oven till cheese melts about 10 minutes. Serve warm.

  For cheddar bites

  • - Remove the edges of toast; flatten bread slices slightly using a rolling pin.
  • - Press each slice in prepared muffin molds forming a cup.
  • - Fill the cups with tuna mixture, top with cheddar cheese, brush the edges with melted butter.
  • - Bake for about 15 minutes or until cheese melt.
  • - Remove from oven and serve.
