Potato sticks with barley

INGREDIENTS Measurements


2 Potatoes (medium size), boiled
1 Egg
2 Cup barley cooked
1/4 tsp ground cardamom
Salt and white pepper
2 Cups fresh herbs (parsley, spring onion, coriander), chopped
1 Cup flour
Oil for frying



  • - Mash potatoes with a fork or by potato masher (not recommended using electric blender so it won’t become elastic).
  • - Whisk egg in a bowl, add remaining ingredients (except flour), and stir.
  • - Add mashed potato to mixture; combine well until obtaining dough-like consistency.
  • - Make stick-shapes from the dough, coat with flour until fully covered. Shake excess flour.
  • - Heat oil in a skillet over medium heat, fry potato sticks until golden.
  • - Remove and place on a paper towel to absorb excess oil.
  • - Serve warm with mayonnaise or tartar sauce.
