INGREDIENTS Measurements

  Grilled calamari

1 kilo calamari
1/2 cup olive oil
6 tablespoons lemon juice
5 garlic cloves, chopped
1 tablespoon chilli flakes (optional)
1 teaspoon ground cumin
1/2 cup chopped green onion
1 tablespoon chopped capers
1 cup chopped red bell pepper
1/2 cup fresh coriander, chopped
1/2 cup parsley, chopped
Salt and pepper

  Salad

2 cups red onions, thinly sliced
2 tablespoons sumac
2 tablespoons olive oil
2 tablespoons lemon juice
finely chopped lettuce
lemon slices for garnish 

METHOD

  for calamari

  • Cleaning calamari by removing the plastic like bone, then remove the outer gray shell
  • Wash well, until the calamari is white inside and out
  • Cut the calamari at the diagonally so that it looks almost rectangular
  • Place the smooth side of the calamari on a smooth surface
  • Make diagonal cuts on the calamari being careful not to go through to the other side cutting through the skin
  • Heat the grill and oil the calamari with half the amount of oil and place it on the grill
  • Mix the remaining oil with the lemon juice, garlic, hot sauce, cumin, coriander, parsley, capers, the onions, and stir well, season with salt and pepper
  • Add the grill calamari to the above mixture while it's hot and mix
  • Heat the grill and oil the calamari with half the amount of oil and place it on the grill

  • Add the grill calamari to the above mixture while it's hot and mix

  For salad

  • In a bowl add the sumac to the onions and using your hand rub the sumac into the onions
  • Add the olive oil and lemon juice and mix
  • Place the lettuce leaves on the serving platter and spread the onions on top of the lettuce. arrange the calamari over the lettuce and garnish with lemon slices
