Cleaning calamari by removing the plastic like bone, then remove the outer gray shell
Wash well, until the calamari is white inside and out
Cut the calamari at the diagonally so that it looks almost rectangular
Place the smooth side of the calamari on a smooth surface
Make diagonal cuts on the calamari being careful not to go through to the other side cutting through the skin
Heat the grill and oil the calamari with half the amount of oil and place it on the grill
Mix the remaining oil with the lemon juice, garlic, hot sauce, cumin, coriander, parsley, capers, the onions, and stir well, season with salt and pepper
Add the grill calamari to the above mixture while it's hot and mix

For salad
In a bowl add the sumac to the onions and using your hand rub the sumac into the onions
Add the olive oil and lemon juice and mix
Place the lettuce leaves on the serving platter and spread the onions on top of the lettuce. arrange the calamari over the lettuce and garnish with lemon slices
