Corn lentil salad

INGREDIENTS Measurements

  

1/2 cup olive oil
1 onion, slices
1/2 brown lentils
salt and pepper
1 green peas, cooked
1 corn, canned
1 red pepper, julienned
1/2 pineapple, canned and cubed
1/4 lime wedges, skinless and seedless
3 tablespoon coriander, fresh
1/2 teaspoon all-spice

METHOD

  

  • Heat oil in a pan over medium high heat, add onion and stir till translucent.
  • Remove onion from oil and set aside.
  • Wash lentils and drain, boil in a medium pot over medium high heat.
  • Bring to a boil, cover and simmer for about 20 minutes or until cooked.
  • Drain lentils and place in a large bowl, add onions and the rest of the ingredients.
  • Season with salt, pepper and remaining oil.
  • Serve salad warm with a slice of bread.
