Chicken Fajita

INGREDIENTS Measurements

  

1/2 kilo boneless skinless chicken breast
2 tablespoons lime juice
2 cloves garlic, finely minced
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon crushed red chili flakes
1/2 teaspoon white Ground Pepper
Salt to taste
1 tablespoon fresh coriander, finely minced
4 tablespoons oil
1 cup assorted bell peppers, sliced
1 onion, sliced

METHOD

  

  • Wash the chicken breast and pat dry, and slice into strips
  • Mix spices, salt, pepper, lime juice, coriander, and half of the oil in a bowl.
  • Add the sliced chicken breast to the mixture, cover and refrigerate for 2 hours or overnight.
  • Place large pan over medium high heat and heat remaining oil
  • Add the chicken and let cook stirring often
  • Add the onions and peppers to the chicken and let cook for 5 min
  • Serve with tortilla bread, salsa, sour cream, and shredded cheese
