1cup a mix of different colors of pepper and onions finely chopped.
METHOD
Clean the fish and wash with water then leave it in water after adding salt for 30 min. then wash again and discharge well.
Mix all ingredients except for the oil in a blender until smooth.
Gradually add the oil while blending the mixture until it becomes homogenous with the rest of the ingredients.
Use this admixture to stuff the fish and cover it as well. Leave aside for 1hr. until it totally absorbed the flavor or cover it and leave it for a few hours in the fridge.
You can cover the fish with vegetables (different colors of pepper and onions).
Put in an oven proof pot with little water, cover it and put in an oven under 350 Fahrenheit until cooked.
Cover or wrap the tail with aluminum paper to preserve it.
It should be cooked in 10 min. in an oven under 350 Fahrenheit whatever the kind of fish is, while its thickness should not exceed 5.2 cm.
CHEF NOTES
Hot red pepper can be used instead of the chili, and you can add parsley to the admixture instead of the fresh or dry mint leaves.
