Baked Herbed Fish

INGREDIENTS Measurements

  

3 medium fishes
1 cup green coriander leaves
1/2 cup mint leaves
6 garlic cloves
1/2 teaspoon chili powder
2 tablespoons roasted almonds
3 tablespoons lemon juice
1/4 cup olive oil
1 cup a mix of different colors of pepper and onions finely chopped.

METHOD

  

  • Clean the fish and wash with water then leave it in water after adding salt for 30 min. then wash again and discharge well.
  • Mix all ingredients except for the oil in a blender until smooth.
  • Gradually add the oil while blending the mixture until it becomes homogenous with the rest of the ingredients.
  • Use this admixture to stuff the fish and cover it as well. Leave aside for 1hr. until it totally absorbed the flavor or cover it and leave it for a few hours in the fridge.
  • You can cover the fish with vegetables (different colors of pepper and onions).
  • Put in an oven proof pot with little water, cover it and put in an oven under 350 Fahrenheit until cooked.
  • Cover or wrap the tail with aluminum paper to preserve it.
  • It should be cooked in 10 min. in an oven under 350 Fahrenheit whatever the kind of fish is, while its thickness should not exceed 5.2 cm.

CHEF NOTES

  • Hot red pepper can be used instead of the chili, and you can add parsley to the admixture instead of the fresh or dry mint leaves.
