Avocado Mousse with Cream Cheese

INGREDIENTS Measurements

  Avocado mousse

1 ripe avocado
1 tablespoon lemon juice
1/4 cup hot water
2 tablespoon gelatin powder
4 tablespoon cream cheese, soften
1/4 cup breadcrumbs
1/4 cup ground pistachio
1 tablespoon butter, soft

  For garnish

1 tablespoon tomato, finely chopped
1 tablespoon onion, finely shopped
1 tablespoon corn kernels, canned
1 tablespoon avocado, chopped
1 teaspoon cilantro, chopped
1 tablespoon lemon or lime juice



  • Peel avocado and remove the pit, place with lemon juice in food processor.
  • Process until smooth, season with salt and pepper.
  • Pour water in a small bowl, sprinkle gelatin and stir to dissolve.
  • Combine avocado mixture with gelatin and cream cheese in a bowl.
  • Line the sides of a small springform tin with waxed paper.
  • Mix breadcrumbs with pistachio and butter in a bowl.
  • Press breadcrumbs mixture into the bottom of the tin.
  • Place the avocado mixture on top.
  • Refrigerate for about 4 hours to hold.
  • Mix garnish ingredients in a bowl, season with salt and pepper.
  • Unmold avocado mousse, place in a serving dish.
  • Garnish with the avocado salsa and serve.
