Asparagus Frittata

  For frittata

8 eggs
1/2 cup mozzarella cheese
1/4 cup flour
6 Asparagus
2 tablespoons oil
1 tablespoon butter

  For serving

8 cherry tomatoes
1/2 teaspoon garlic, minced
2 tablespoons olive oil



  • Preheat oven to 180 degree Celsius.
  • Beat eggs in a bowl, season with salt and pepper.
  • Mix in cheese, flour, and asparagus.
  • Heat butter and oil in a pan over medium heat, add egg mixture.
  • Place pan in the oven for about 10 minutes or until done.
  • Place tomatoes on an oven tray, season with garlic and olive oil.
  • Grill for about 10 minutes.
  • Serve asparagus frittata hot with grilled tomatoes.
