Arabian Spiced Tuna with Rice

INGREDIENTS Measurements

  

2 cans Tuna in olive oil
2 tablespoons olive oil
1 green bell pepper, chopped
1 teaspoon ginger, minced
1 teaspoon garlic, minced
2 chili pepper, optional
1 dried lemons (lomi)
1/2 teaspoon dried lemon, crushed
1/2 teaspoon cloves and cinnamon
1/2 teaspoon cardamom
2 tablespoons turmeric
1/4 cup water
1/4 cup parsley, chopped
1/4 cup coriander, chopped
Salt and pepper

  for serving

2 cups Basmati rice, cooked

METHOD

  

  • - Heat oil in a sautéing pan over medium high heat.
  • - Add green pepper and sauté for 2 minutes.
  • - Stir in ginger, garlic and chili pepper, season with spices, salt and pepper.
  • - Drain tuna and add it to the mixture.
  • - Pour water, parsley and coriander let cook for 5 minutes.
  • - Serve on top of cooked basmati rice.
