On Monday August 20, 2012 First Lady Michelle Obama hosted the first ever Kids’ “State Dinner” at the White House welcoming 54 budding chefs to a formal luncheon in the East Room! The guests, who are aged 8-12, represent all U.S. states, three territories and the District of Columbia, and each of them (and their parents) submitted a healthy recipe as part of the Healthy Lunchtime Challenge.
The Healthy Lunchtime Challenge invited families to create an original lunchtime recipe that is healthy, affordable and delicious, and follows the nutritional guidelines of MyPlate. The winners were chosen by a panel of judges from the organizations that teamed up with Mrs. Obama on this initiative: Epicurious, the Department of Education and the Department of Agriculture.

The Department of Tourism and Commerce Marketing in collaboration with Emirates Culinary Guild is launching the Emirati Cuisine initiative on 4th January 2013, We would like you to be part of this legendary national initiative program with the attempt to Break 2 Guinness World Records in:
1. The Biggest Serving of Loukamath (Emirati Sweet) ever served as the new record. The Recipe is attached; we are requesting the Hotels to prepare from 1000 – 5000 pcs.
2. The Biggest gathering of Chefs / Cooks in chef’s jackets, apron and hat. We require 2,500 Chefs to gather from 1:30pm on 4thJanuary 2013 at Meydan Race course to break the current record.
We would like to encourage the participation of all chefs who work in prestigious hotels, restaurants, catering companies, or private homes/kitchens. The most number chefs participated will be compensated a huge media exposures as each person will receive a Certificate of Participation. Kindly note that each participating chefs shall be in proper chef’s dress code as mentioned above.

Unlike many parts of the world, where a good dessert is the natural conclusion to a good meal, Arabian desserts are treats that are meant to stand alone. I often enjoy them in the mid-afternoon with a small cup of fresh mint tea, and have built some of my fondest memories from just such occasions. In Arabic countries, sweets are often purchased in small neighborhood pastry shops. There are few greater pleasures than to create traditional Arabian desserts in your own kitchen just as you might find them in your favorite sweet shop. Most of the ingredients used in these recipes are readily available in supermarkets. Some of the more traditional Arabian ingredients — such as Konafa (shredded pastry), Qeshta (clotted cream), and rose petal jam — can be found in Middle Eastern markets or online. Clarified butter and sugar syrup are particularly essential to the crisp texture and rich flavor in many Arabian sweets, and should not be substituted or used sparingly. For the best results in all recipes, use only the best quality ingredients you can find. In the following pages, I share many of the secrets I have learned in making Arabian pastries through the years. I embrace many of the traditional characteristics of these sweets, and add some new twists to old classics. Most importantly, I don’t skimp when it comes to ingredients. Making cooked cream
- Mix 1/2 cup milk with 3 tablespoons cornstarch. In a heavy
Saucepan over medium heat.
- Combine 1 1/2 cup milk with the cornstarch mixture.
- Bring to a boil, stirring constantly, until thickened.
Another method,
- Bring 2 cups of milk to a boil in a saucepan over high heat.
- Stir in 2 tablespoons of lemon juice, remove from heat, and let cool until milk solids and
liquid separate.
- Strain and discard liquid.

Pearl shape couscous made of rubbing burgul, whole wheat flour and salted water until getting pea-size balls. Maftoul is famous in the Levant area. The name Maftoul is famous in Jordan and Palestine, Maghrabiah is famous in Syria and Lebanon. Usually steamed and serve with chickpeas and chicken. |

-Read recipes before you start.
-Have cake ingredients at room temperature and measure carefully and correctly.
-Both bowl & mixing attachment must be clean and dry.
-Butter and eggs should be at room temperature.
-Whisk eggs & sugar for at least 5 minutes.
-Sift flour & dry ingredients to allow air in and avoid any lumps.
-Flour (dry ingredients) should be folded gently to preserve as much air as possible.
-Scrap sides and bottoms of bowl frequently with spatula during mixing.
-Level batter evenly in pans.
-Preheat oven 10-15 minutes before baking.
-Adjust oven rack in the center.
-Position pans near the center of the oven, make sure not to touch oven sides.
-Don’t open the oven door before the cake is set about 15 minutes.
-Cool cake for 10 minutes in pans before inverting on a wire rack.
-Make sure to cool cake completely before frosting or decorating. |

Quick or sweet bread

Family Time
flavors of the season. Fall is here, so fill the house delicious aromas, and bring the family to the table together sharing at least one meal a day. Make it quality family time and fun. Studies have shown that if a family has a regular mealtime, it gives the children the opportunity to discuss their problems, relaxes and encourages them to unwind from their day. Food is fuel, but when combined with family, friends and home atmosphere, it becomes something indescribable or beyond words. |
Do & Don't (when cooking pasta):
The pot size: Get a good sized pot depending on how much pasta you are cooking. Make sure it is big enough so the water doesn't spill when it's boiling.
The water amount: Use at least 4 quarts of water for each pound of pasta (4 liters for each one-half kilogram). No oil or other additives are required.
Rinsing: Do not rinse the pasta as if you did, you will be cooling the pasta before you add the sauce. Instead, drain the pasta, add it back into the pot you cooked it, turn on the heat and add the sauce, stirring until well-mixed and hot. The pasta will be thoroughly coated by the sauce and the pasta will stay hot when you serve it.

Taboullah
Ingredients
1/2 cup fine bulgur wheat
4 cups parsley, stems removed, finely chopped
1/3 cup lemon juice
1 tsp. salt
8 green onions (scallions, spring onions), white parts only, finely chopped
1/4 tsp. ground cinnamon
1/3 tsp. ground cumin
1/8 tsp. ground red pepper
1 big tomato, finely diced
4 Tbsp. olive oil
1/3 cup fresh mint, finely chopped
2 hearts romaine lettuce
Salt and black pepper to taste
Method
-Pick stones from bulk bulgur before using. Rinse with cold water. Drain and set aside.
-Rinse the parsley and pat dry before chopping.
-In a medium bowl, combine all the ingredients except the lettuce and mint.
-Let the salad stand in the refrigerator for 1 hour to absorb the flavors.
-Add the finely chopped mint before serving.
-Toss and taste for extra seasoning.
-Serve on a bed of lettuce.

Trifle
For the custard
3 Egg yolks
1/4 Cup white sugar
1 Cup milk
2 Tablespoons starch
1/2 Teaspoon vanilla
For the cake
1/2 Cup white sugar
5 Eggs
1 Teaspoon vanilla
1/4 Cup flour
Berry jam for topping
Light syrup
Strawberries, vertically cut into halves
cream
Black berry for topping
For the custard
- Beat the egg yolk with the white sugar in a bowl over boiling water.
- Add milk while stirring until the mixture boils then add the starch. Stir continuously for about 20 minutes until the mixture thickens. (In case of clumps pass the custard through a colander to get rid of the clumps).
- Add the vanilla and place the mixture over an iced water bath to reduce its temperature.
For the cake
- Preheat the oven to 170°c.
- Line the baking tray with a silicon sheet and sprinkle with sugar. Place in the oven for about 10 minutes until heated without changing its color or getting molten.
- At the same time beat the eggs and the vanilla in a deep bowl (using an electric beater or hand whisks) at medium speed until fluffy.
- Add hot sugar while whipping.
- Sieve the flour and add it gradually to the egg mixture. Stir gently until all ingredients mix together.
- Increase the oven temperature to 180°c.
- Line the baking tray (high-edged) with parchment paper
- Pour the cake into the prepared tray. Bake in the oven for about 15 minutes.
- Turn the cake over a metal grid and leave to cool down completely. Cut the cake into two equal halves.
- Brush one of the two halves with some berry jam, then put the other half back (press gently to stick together).
- Cut the cakes into small equal squares.
- Pour a layer of custard in a deep serving bowl, then place a layer of cake squares over it.
- Moisten the cake with some syrup.
- Arrange the strawberry slices on the edges of the bowl (as you can see from the picture). Place a layer of cream and flatten the surface.
- Top the surface of the trifle with some berry jam forming a web. You can do this by forming thin circles of different sizes having the same centre, and by using a toothpick pass a part of the smaller circle towards the biggest circle and repeat this at distant points.
- Top the trifle with some blackberries then serve.

Kenyan Chef Cooks Local Dishes with Celebrity Chef Osama El- Sayed
Local Kenyan chef Ali Mandhry had the rare opportunity to present his country’s delicious authentic cuisine live on the Dubai TV on Thursday 15th December 2011.
He cooked Kenyan dishes along with the celebrity chef Osama Elsayed who is the most popular and trusted chef of UAE and also a role model to Ali.
“Ever since I was young, I have always looked upto Chef Osama Elsayed, my late grandfather used to love his shows and followed his cooking recipes on air.
“I have been watching his show ever since I was nine years old, now I got the rare opportunity to not only share a podium but also cook with him, it was an amazing experience and a dream come true”, exclaimed Ali Mandhry.
Ali was awarded by Dubai TV for being at the show and sharing local Kenyan cuisines dishes and recipes with the international media and the world live on chef Osama’s show ‘Ma Osama Atyab’, thus gaining Kenyan cuisine international recognition.
The show attendants and audience loved the dishes he prepared which were: ‘ugali’ served with ‘sukuma wiki’ and ‘karanga’, ‘kuku wa kupaka’ served with ‘wali wa nazi’ and ‘ndizi za kiume za nazi’,

Chef Osama El-Sayed was one of the judges ofTHE MLA BLACK BOX CULINARY CHALLENGE 2010 which is organized by Meat & Livestock Australia (MLA) and other co-sponsors sponsors-who have successfully organised over 77 Black Box Competitions in the Asian region since 1996- and endorsed by WACS, the World Association of Chefs Societies and supported by the Emirates Culinary Guild
The aim of the MLA Black Box Culinary Challenge is to encourage young professionals to work and compete in a team environment to display their skills and talents in a “hands-on” outside catering situation.
A team consists of a Team Chef/Manager (no age restriction) and three young chefs (below 35 years) who are allowed represent a hotel property, airlines caterers and professional culinary schools
The event in Dubai will be hosted by the Madinat Jumeirah.
Yesterday was the TEAM BRIEFING; all teams have been presented with a box of identical ingredients (which are compulsory) from which they will have one hour to develop a four course menu comprising (soup- starter- main course- dessert).
Chef / Osama El-Sayed will be one of the competition judges In partnership with other three of the most professional and famous chefs, who will evaluate the participated teams dishes considering a lot of factors such as: the maximum use of the meat cuts, creativity, recipe and menu compilation, the arrangement of materials for trouble-free working and service and for safe, the correct basic preparation of food, corresponding to today’s modern culinary art, applying the Appropriate cooking techniques, clean arrangements, with no artificial garnishes and no time-consuming arrangements and The typical taste of the food should be preserved. It must have appropriate taste and seasoning. In quality, flavour and colour, the dish should conform to today’s standards of nutritional values.
About awards, each team member will receive a certificate of participation. MLA Black Box Culinary Challenge Gold, Silver or Bronze Awards according to points scored. In addition, the top three teams with the highest scores will be awarded the following:

Food For Thought
With several popular TV cookery shows under his pinny, Cairo born culinary guru Osama El Sayed has taken the USA by storm and is now becoming Dubai's answer to Jamie Olivier, with his hands on TV program Maa Osama… Atyab (It's More Delicious with Osama). "I had my own studio in my house where I used to shoot cookery show and aired them on MBC for almost 12 years. I had shows in New York, Detroit and Washington. Now I've had my show on Dubai TV since Ramadan 2004."
Commenting about Gordon Ramsay he said that Gordon Ramsay does his cooking in a liberated way.

Culinary guru Osama El Sayed, host of popular TV shows Ma Osama… Atyab (It's delicious with Osama) on Dubai TVand Bilhanna Wa Shiffa (With Joy and Good Health) will share his expertise with families in Dubai and Jeddah for the Holy Month of Ramadan. Chef Osama will tour the Lulu Hypermarket Barsha, Dubai on August 27 and the Hyper Danube, Serafi Mall, Jeddah, the following day with the Braun Multiquick Complete 6in1 Food Processor.
