Bay Leaves

Bay Leaves come from the sweet bay or laurel tree, known botanically as Laurus nobilis. The elliptical leaves of both trees are green, glossy, and grow up to 3 inches long.

Baba Ghanoush

A Middle Eastern purée of eggplant with tahini, lemon juice, olive oil and garlic.

Baklava

A Middle Eastern sweet pastry made of extremely thin sheets of phyllo dough layered with chopped nuts and honey syrup, baked with butter and oil, and cut into diamonds.

Basbousa

A Middle Eastern baked pudding made with semolina, yogurt and nuts.

Bastilla

A traditional Moroccan dish of phyllo (fillo) dough surrounding a mélange of shredded chicken or pigeon, ground almonds and spices. The “pie” is baked until crisp golden brown, then sprinkled with powdered sugar and cinnamon. Also spelled bastela, bastila, bisteeya, b`steey and pastille.

Batinjan

Arabic for eggplant.


Börek

A Turkish cuisine, a very thin pastry filled with savory or sweet stuffing, folded or rolled up, then fried or baked.


Burghul

Cracked wheat, hulled and parboiled, originally Persian; this nut textured cereal is ground in different grades for various dishes. Also spelled burgul.

Basterma

Sliced salted dried beef coated with garlic and spices.


Bint El Sahn

Thin layers of dough with ghee in between “Yemeni Style “, served with honey.
 


Beryani

Basmati cooked rice that includes (Cardamon, cloves, bay leaves, coriander, ginger, onion and garlic).Chicken, meat or fish are added to it.
