Pizza Stuffed with Tuna

INGREDIENTS Measurements

  For the dough

1 tablespoon yeast
1 1/2 tablespoon sugar
1 1/2 cups warm water
1 1/2 cups flour
pinch of salt
2 tablespoons olive oil
1/4 cup semolina

  for the topping

2 cans tuna in olive oil
1 cup tomato sauce
1 cup colored bell peppers, small cubes
1/2 cup spring onions
Salt and pepper
Chili flakes (optional)
2 cups shredded mozzarella cheese
1/2 cup green olives, sliced

  for the tomato sauce

2 tablespoons olive oil
2 cups tomato, diced
1 teaspoon fresh thyme
1/2 teaspoon garlic, finely chopped
Salt and pepper

METHOD

  

  • - Combine flour, yeast, sugar, salt and olive oil using the hook attachment of the electric mixer on a medium speed.
  • - Add water gradually; knead on medium speed for about 10 minutes until dough is smooth and elastic.
  • - Grease a bowl with oil, place the pizza dough and turn it around to coat.
  • - Cover the bowl and let it rise for about 45 minutes or until it is doubled in size.
  • - Preheat oven to 180 degree Celsius. Sprinkle a baking sheet with semolina.
  • - Punch the dough down to deflate a bit. Place on floured surface.
  • - Shape dough into large circle (1 cm thickness).
  • - Cut from the center, towards the edge forming triangles making sure to stay away 3 cm from the edge.
  • - Combine tomato with olive oil, thyme, garlic, salt and pepper in a bowl; evenly distribute tomato sauce mixture on dough circle in a ring shape.
  • - Mix pizza toppings in a bowl and distribute over tomato sauce, top with mozzarella cheese.
  • - Fold dough from the center to the edge, covering the filling. Repeat to form a ring.
  • - Bake for about 20 minutes or until crust is golden and cheese is melted.
  • - Slice and serve warm.
