INGREDIENTS Measurements

  

2 cups cream cheese
1 cup feta cheese
1/2 tablespoon green pepper, finely chopped
1/2 tablespoon red pepper, finely chopped
1/2 tablespoon yellow pepper, finely chopped
1/2 tablespoon orange pepper, finely chopped
Salt
1 cup walnuts, coarsely ground
1 cup breadcrumbs

  For serving

Small scoops (balls) of watermelon/ melon / cantaloupe
Fresh mint leaves for garnishing

METHOD

  

  • In a bowl, soften cream cheese with feta cheese until creamy.
  • Add peppers, season with salt, stir to incorporate.
  • Shape mixture into balls in the size of small lime, refrigerate to hold.
  • In a plate, mix walnuts and breadcrumbs.
  • Roll balls in breadcrumb mixture to coat.

CHEF NOTES

  • Serve with small balls of watermelons/ melons/ cantaloupe and garnish with mint leaves.
