Aioli sauce

INGREDIENTS Measurements

  

2 egg yolks
½ tablespoon minced garlic
½ teaspoon crushed pepper
Salt
1 tablespoon lemon juice
1 cup olive oil

METHOD

  

  • Beat eggs with garlic in food processor, season with salt and pepper, continue beating.
  • Add oil gradually in a thin stream with continuous beating.
  • Add lemon juice and pulse until all ingredients are well combined.
  • Refrigerate up to 2 days.

CHEF NOTES

  • Use fresh organic eggs.
